Defenders
3 large defenders (zucchinis)
-they should be large enough
to cut in half and be hollowed
out.
1 large tomato
1 large onion
1 tbsp minced garlic
1 tbsp olive oil
3 tbsp diced red pepper
1 package of your favorite
sausage(hot italian for me).
Cut defenders in half. Scoop
out their insides w/ a spoon.
(yes this is painful for
them, but extremely enjoyable for me)
Save their insides.
Cut into cubes the tomato
and onion and dice the red pepper.
In a 325 degree oven, place
the sliced hollowed haves of the
defenders in a baking dish
w/ enough water to coat the bottom
of the dish. Cook them until
they are tender to poking(almost soft).
In a sautee pan, brown
sausage in the olive oil. Add onion, pepper,
and mushroom(forgot the
mushrooms), garlic. Salt and pepper to taste
and add 2 tsp of oregano.
Once onions turn translucent, add tomato
scooped out defender insides
and your favorite tomato sauce(1/2 cup).
Bring to a boil, reduce heat
and simmer for approx 20minutes.
Once the defender halves are
tender, remove from oven. Grate parmesan
cheese or cheat and use the
lil shaker over whats in the sautee pan and
mix well. Add bout 1 to 2
cups of grated mozzarella cheese to saucepan
and mix till melted.
Drain water from bakedish
that the defender halves are in. Fill the
halves from sauce pan
generously. Place in same oven at 325 and cook for
approx 10 min. When ready,
broil till top starts to brown. Remove from
oven and serve immediately
and grate a lil more parmesan on top.
