Auri’s Egg Drop Soup

 

This is an delicious chinese soup which is simple to make and very inexpensive.

 

Ingredients:

4 cups chicken stock (or 4 cups water + 4 chicken bullion cubes)

1/4 teaspoon salt

1/4 teaspoon sugar

1/2 cup corn starch mixed w/ 1 cup water (for thickening)

1 Egg

 

Instructions:

Boil your chicken stock + salt + sugar.  While waiting for the soup to boil, crack the egg and put it in a cup and scramble it FULLY with a fork. After stock reaches a boil, then thicken it to your liking by pouring in your corn starch + water mixture little by litte.  Once thickened to desired viscosity, turn off the burner and take the pot off of it.  Then stir the stock fairly rapidly while pouring in 1 drop of the egg mixture in at a time; make sure not to pour the egg in too quickly else will get large clumps which is undesired.  Garnish the soup however you see fit if you like (e.g. minced green onions etc.).  Enjoy your soup!!
