Lorelei’s Zesty Spanish Rice Casserole
2 pkg Mahatma Spanish Rice
1 can corn
1 lb ground beef
1 can Rotel Tomatoes
1 lb cheddar cheese
1 can diced olives
Brown hamburger. Prepare the rice with the directions under the flap... make
sure you include the salsa, as that adds the extra zing. Once you are to
the point where you start boiling the mixture, add in can of corn,
drained. Rotel tomatoes keep their liquid. Add in hamburger. If
needed, stir in enough water to make sure the mixture won't burn when
simmering. Takes about 45 minutes for rice to cook thoroughly.
Scoop the entire mix into a casserole dish and cover with grated cheese and olives.
Bake at 350 for about 15 minutes, or until cheese melts.
