Khy’s Wild Rice Casserole
1 cup uncooked wild rice (you can substitute brown
or white rice)
1/2 cup slivered almonds
2 tablespoons chopped green onion
1 can (8 ounces) mushroom stems and pieces, drained
1 can cream of mushroom soup
1 cup beef broth or water
1 lb ground beef
Cook and stir the ground beef, wild rice, almonds,
and green onions
in a little oil or margarine if needed,
until the almonds are golden
and the ground beef is cooked through.
Drain excess oil.
Heat oven to 325. Pour the
wild rice mixture into an ungreased
1 1/2 quart casserole. Combine
the cream of mushroom soup
and broth , stir into the wild rice mixture. Cover and
bake about 1 to 1 1/2 hours.
