Aunt Re’s Rice Pudding

 

 

1 ½ cup rice, cooked

3 cups milk

3 eggs, beaten

¾ cup sugar

1 teaspoon vanilla

½ teaspoon cardamom (optional)

¼ teaspoon salt

2 tablespoons sugar

1 teaspoon cinnamon

1/3 cup raisins, blanched (optional)

 

Preheat oven to 350°, and butter a casserole dish.   Combine all ingredients except for the last sugar and cinnamon.  Put combined ingredients in the prepared casserole dish; sprinkle the sugar and cinnamon on top.  Bake for approx. one hour.
