Lorelei’s German Pancakes
For this one you really should use a cast iron skillet, or at minimum screw off
the handle on your regular skillet.
6 eggs
1/2 cup flour
1 tsp vanilla
1/2 cup confectioners sugar (more or less to taste)
1/2 cube margarine or butter
Pre-heat oven to 325 degrees. Melt butter in skillet. In large bowl, mix together
all the other ingredients. Pour liquid mixture into skillet and pop in
oven for around 10-15 minutes. You will really know it is done when the
mix rises, and the top is golden brown. Just flip the entire thing onto a
plate and top with syrup or jelly.
