Aerianne’s Swedish Meat Balls

Ingredients

5 hg minced meat
1/2 dl dried breadcrumbs
1 1/2 dl vegetable broth
1 small chopped onion
1 egg
1 teaspoon salt
ground pepper

Mix all ingredients save the minced meat in a bowl. Let it rest for 5-10
minutes: Mix in the minced meat and stir until the mixture is smooth. Roll
the meatballs to spherical shape and place them on a well-washed chopping
board. Make sure that the meatballs are of fairly even size and not larger
than 1 1/2 inch across. Fry in a pan with butter on medium heat. Do not fry
too many meatballs at once - they need to be able to get color on all sides.
Lower the temperature once the meatballs have become brown. Serve with
potatoes, lingonberry and pickled cucumber. If you want spicier meatballs
you can exchange the vegetable broth with broth from tinned sprats cured in
brine.
