Jaenelle’s Fried Ham and Rice

 

Shopping List
1 slice of ham bought from deli 1/8 in thick (honey baked, approx. 1/3 pound.
1 small onion
1 small red pepper
1 small bag of frozen corn
1 small bag of rice (I buy Mahatma extra long grain enriched rice)
1 small jar of minced garlic (usually in the fresh veggie section of the market.
Rice
In a sauce pan bring 1 cup of water to a boil.
Add ½ cup of rice.
Cover with lid and turn down very low.
Set timer for 20 minutes.  Do not open lid or peek.
Turn off and peak. If the water isn’t all gone let rice cook a few minutes more.
Cool a little before using.
Fried Rice with Ham
Turn on burner to medium.  Add 1 tablespoon of oil to pan once pan is hot. 
Add about ½ of a small Onion, mince, ¼ of a red pepper to pan along with ½ teaspoon of Garlic.
Cook for 1 minute.
Add ½ cup of chopped Ham, ¼ cup of frozen Corn and Rice.  Stir constantly until hot.  Add a little water if necessary. Sprinkle with Salt and Pepper.  And enjoy!
