Spoke’s Antipasto
 

This is a great appetizer but can also be served as part of your main dish
if you wish.

For 1 large bowl of this you need:
Ingredients:
1 lb of each of the following:
Celery, Carrots, Onion, Coliflower, Green Beans, Red Pepper.
3 cans of tuna fish.
1/2 gal of ketchup (64 oz)
Black pepper and really important ... chili!

If you want, 4-6 oz of mushrooms, 1 lb of shrimps, or some green olives.

Preparation:
- Put half the ketchup and all the tuna fiish on low fire on a big pot (big
enough to hold everything on it) and mix.
- Cut the green beans on 1 inch long piecees. Put them on a pot with water
just enough to cover them and let them boil for 2 minutes (do not over
boil). Add to the ketchup mixture.
- Cut all the vegetables in thin slices, nno longer than a couple of inches.
If you are using shrimps just clean them (remove the shit ;) ). If you are
using mushrooms just cut them in slices.
- Fry each of the vegetables separatelly ((even the coliflower yes) on a
small portion of oil (I prefer olive oil). If using mushrooms or shrimp,
also fry and add.
- As they are fried, add to the ketchup wiith the tuna fish and mix
throughly. Add the rest of the ketchup as you add the vegetables.

Once you have everything mixed, add pepper (I use a tablespoon of black
ground pepper or more) and add the chili (2 tablespoon is what I use, but
you just add/mix until desired). Increase the temperature to medium temp and
let it boil for 5 minutes.

Let it cool down a few and set in a serving dish. If you have anything left,
store it on a plastic or glass container and freeze (I've frozen it for 3
months and its still yummy when I thaw it ;) )

When I serve it, I put it on crakers, or baked bread. It works as a spread
basically but you can also have it with some rice as your meal.

You serve it cool (room temp).
