Yuri's Veggie Creations    

           
          Note: My recipes usually do not have exact measuring portions.
        You have to experiment with your sight and tongue. But the list is
        from great amount of that item to less. Put whatever items you like
        the most more or less. You are the chefs my friend!!

   
    (All the recipes serve for two =)
                               

         MAIN DISHES   

        Braise Ginger Tofu
   
   
        Ingredients: Tofu (soft or medium firm), fresh ginger slices,
        black pepper, salt, vegetable stock, cooking oil.

   

   
        1. Saute ginger with some oil in a pot. Add some salt and
        black pepper and stir on high heat.

        2. Add the cubed tofu into the pot and coat it with some soya
        sauce. Tofu should be slightly brown in colour. Add some
        salt and black pepper again, stir and let simmer for 2 mins.

        3. Add a bit of vegetable stock ( 1/2 teaspoon) and let cook
        for 5 mins on medium heat.

       Variations: Use different kinds of tofu (sponge, deep fry, firm)

 


        

       
Purple Delight  

        Ingredients: 1 eggplant, medium firm tofu, frozen mixed vegetables

         
(carrots, peas and string beans), 2 Yves veggie dog, vegetarian
        oyster sauce, salt, black pepper and cooking oil.

  


           1. Put some cooking oil in a pan on high heat.

         2. When the oil is hot, add the cut veggie dogs and saute
         until lightly brown with a bit of salt and black pepper.

         3. Add the cubed eggplants and stir -fry for 30 secs. Add some
         salt.

         4. Add the vegetarian oyster sauce, stir until well mixed.
         Fried until somewhat brown colour. When it gets somewhat
         dry, add a 1/4 cup of water and put in the rest of the vegetables.

         5. Cook for about 5 mins and check if the veggies are done.

         6. Taste, make changes and serve.
   

       


       
  NOODLES / PASTA   

        Tangy Soba Noodles with Tomato

        Ingredients: Soba noodles, celery, 1 tomato, 1 apple, 1/2
        zucchini, ketchup, soya sauce, salt, mapo tofu
        sauce, black pepper, cooking oil.


        1. Boil the soba noodles and put on the side.

        2. In a pan, sautee the cube tomato and apple with some
        cooking oil and salt on high heat. This is to make a sauce.

        3. Add the other veggies with soya sauce, some ketchup, and
        mapo tofu sauce. Wait until boil then add some water.

        4. Then mix in the noodles, taste for changes and serve.

        Note: It works best with a Mcintosh apple.



       
       
   
       Sun dried Tomatoes Herb Pasta


         Ingredients: spagetti pasta, sun-dried tomatoes, olive oil, balsamic
       vinegar, soya sauce, veggie stock, dried or fresh parsley, black
       pepper, and salt.
       


        1. Boil the pasta and put on the side.

      2. In a large bowl, put the pasta and mix in some olive oil,
       veggie stock(2 teaspoons), black pepper, salt, balsamic vinegar,
       parsley and soya sauce.

      3. Redehydrate the sun-dried tomatoes by putting some hot
      water with them for 15 - 20 mins. When the tomatoes are
      ready, in a separate dish, mix them with some olive oil.

      4. Then take the tomatoes and mix it together with the pasta.
      Taste and serve.
