Coconut-Vanilla Shrimp

Spoonful Olive Oil.
10 Jumbo Shrimps(devained).
1/2 cup Tahiti Rum.
1/2 cup Heavy cream.
Fresh Coconut juice.
Fresh Vanilla bean(scraped for use).

Clean the shrimps. lightly cook the shrimps on Olive oiled skillet for 2-3 min. Set it aside.
Pour the rum on the same skillet, then pour in the cream, stir it mildly.
Add the fresh Coconut juice, add the fresh Vanilla last. Let it concentrate as sauce for the Shrimp.
Add the cooked Shrimps to the Sauce. Remove from the heat. Add Salt and Pepper to taste.
Serve around the cooked rice, top with drops of tomato sauce on each shrimps.
