Ingredients:
1 Cup of sugar for cookie batter
� Cup of sugar to roll cookies in (optional)
� Cup of softened butter
1 Egg
1 Teaspoon vanilla
2 Cups of all-purpose flour
1 � Teaspoon baking powder
� Teaspoon baking soda
� Cup English toffee bits OR chips
Preparation:
Heat oven to 350.
In large mixer bowl combine sugar, butter, egg,
and vanilla.
Beat at medium speed, scraping bowl often, until
creamy (1 to 2 minutes).
Reduce speed to low; add flour, baking powder, and
baking soda.
Beat until well mixed (1 to 2 minutes).
By hand, stir in toffee bits.
Shape dough into 1�-inch balls.
Roll in sugar.
Place 2 inches apart on ungreased cookie sheet.
Flatten with bottom of glass to 2 1/2-inch circles.
(If glass sticks, dip glass in sugar.)
Bake for 11 minutes or until edges just begin to turn
light golden brown.
Sprinkle with additional sugar if desired.
