Ingredients:
5 medium or 3 large plump sweet potatoes, cooked
6 eggs
2 1/4 cups sugar
2 Tbsp. flour
1 1/2 cups margarine or butter, melted
1 Tbsp. lemon extract
2 Tbsp. vanilla extract
1/4 to 1/2 cup of canned milk (Pet or Carnation)
2 (9 inch) deep dish pie shells
Preparation:
Preheat oven to 350 degrees.
Add butter or margarine to hot potatoes; let butter or margarine melt.
Mix sugar and beat with electric mixer until melted, add slightly beaten eggs and flour.
Mix well. Add milk and extracts and continue to mix well with beaters.
Divide evenly into 2 deep dish pie shells.
Bake in 350 degree oven for 90 minutes.
