Salmon Croquettes

Ingredients

1 (15oz) can of salmon
1/4 cup finely chopped onion
1/4 cup all purpose flour
1 tsp baking powder
1/2 cup fine breadcrumbs
2 egg whites (lightly beaten)
1/4 cup skim milk
dash of salt and pepper

Preperation

Blend all the ingredients in a bowl and chill until crumbs and milk are absorbed.
Shape chilled mixture into 4 - 6 patties and brown in a non-stick skillet sprayed with a non-stick spray.
(For a new taste, try the new lemon-flavored spray.)
Cook over moderate heat until patties are browned on each side.
Serve with baby peas and a tossed salad. ****************
