Peach Muffins

Just because it's winter doesn't mean you should avoid fruits.
Do a little baking today and remember that summer time fruit is around the corner.

Ingredients:

1-1/2 cups flour
3/4 tsp. salt
1/2 tsp. baking soda
1 cup sugar
2 eggs, well beaten
1/2 cup salad oil
1/2 tsp. vanilla
1/8 tsp. almond extract
1/4 cup. chopped almonds
1-1/4 cup coarsely chopped fresh or canned peaches (about 2 large or 3 small peaches)

Preparation:

In mixing bowl combine dry ingredients, make a well in center and add eggs and oil,
stirring only until dry mix is moistened. Stir in remaining ingredients.

Spoon 1/3 cup batter into greased muffin tins.

Bake 350 degrees for 20-25 minutes or until muffin test done.

You can also make peach bread by greasing and flouring 5 x 9 inch loaf pan and bake for one hour.
