Curried Vegetable Bake

If you like curry, you will love this. Bring the
taste of the West Indies into your kitchen. Enjoy!

Ingredients:

1 Zucchini thickly sliced
1 Carrot sliced or coarsely grated
1 Large onion sliced
1 Head of broccoli or cauliflower
1 Teaspoon of virgin olive oil and 1 tsp butter
1 Can of light coconut cream
1 Tablespoon curry powder (your preference)

Preparation:

Heat oil and butter in large non-stick frying pan or skillet,
saut� onions until just tender, add zucchini and other vegetables
and saut� until just golden brown.

Remove from frying pan and place in a large baking dish.

Place 1 tablespoon curry powder in frying pan and stir until
all liquid absorbed and it lets oil go.

Add coconut cream and mix well.

Pour this mixture through the vegetables in baking dish and place
in pre-heated oven at 350 degrees/ 180 centigrade and bake for
30-45 minutes.

Serve immediately with any meat, or eat as main course on its own
with a tossed salad.
