10 oz. box broccoli, chopped
10 oz. box spinach, chopped
1/2 cup mayonnaise
1 can cream of mushroom soup
1 egg, beaten
2 Tbsp. chopped onion
2 Tbsp. butter
1/4 cup Ritz crackers, crushed
1/2 cup sharp cheddar or Swiss cheese
Preparation:
Cook vegetables for five minutes;
drain and pat dry
with paper towels.
Combine soup, mayonnaise, and egg in a large baking
dish and mix.
Add cheese.
Mix well, add vegetables,
and stir.
Put cracker crumbs on top and pour butter over crumbs.
Bake at 350 F for one hour.
