3 medium onions, chopped
2 tablespoons vegetable oil
2 green bell peppers, cored and chopped
3 garlic cloves, crushed in garlic press
2 pounds ground pork
1/2 pound sweet Italian sausage, casings removed
2 packages (1 1/4 ounces each) chili seasoning mix
2 cans (28 to 35 ounces each) plum tomatoes in juice
1 can (16 to 19 ounces) each pinto beans, kidney beans, and white beans, rinsed and drained
1/4 cup cornmeal
1/2 cup water
1. Cook onions in oil in large pot 5 minutes until tender. Add peppers and garlic; cook 5 minutes.
2. Meanwhile, brown pork and sausage in large skillet in 2 or 3 batches; drain fat. Stir pork, sausage, and chili mix into pot; cook 1 minute. Add tomatoes and beans and bring to a boil. Reduce heat, cover, and simmer 20 minutes.
3. Combine cornmeal and water, and then stir into chili; simmer 15 minutes, stirring often.
