Often served with summer rolls or grilled meats, this sauce is also great
over rice.
3 tablespoons packed light brown sugar
1/4 cup Asian fish sauce
3 tablespoons fresh lime juice
1 or 2 thinly sliced fresh Thai chiles (1 to 2 inches long) or
1/4 teaspoon dried hot red pepper flakes
1 garlic clove, thinly sliced
Stir together all ingredients in a bowl.
Cooks' note:
Sauce keeps, covered and chilled, 1 week.
Makes about 2/3 cup.
