Applesauce Oatmeal Muffins

Baking doesn't have to be about cookies and cakes.
Here is a healthy recipes for muffins.
You'll kitchen will smell wonderful when you pull these out of the oven.

Ingredients:

MUFFINS:

1-1/2 cups uncooked Oatmeal
1-1/4 cups all-purpose flour
3/4 tsp. cinnamon
1 tsp. baking powder
3/4 tsp. baking soda
1 cup unsweetened applesauce
1/2 cup skim milk
1/2 cup firmly packed brown sugar
3 Tbsp. vegetable oil
1 egg white (or egg beaters)

TOPPING:

1/4 cup uncooked oatmeal
1 Tbsp. firmly packed brown sugar
1/8 tsp. cinnamon
1 Tbsp. melted margarine

Preparation:

Heat oven to 400 degrees.
Spray muffin tin with non-stick spray.

Combine oats, flour, cinnamon, baking powder and baking soda.
Add applesauce, milk, brown sugar, oil and egg white.
Mix just until moistened. Fill muffin tray cups until almost full.

Combine all the topping ingredients and sprinkle over batter in cups.

Bake 20 - 22 minutes or until deep golden brown.

Yields 12 regular-size muffins or 36 mini-muffins.
