Ingredients:
1 1/2 cup oil
1 1/2 cup sugar
1/2 cup brown sugar
3 eggs
3 cup flour
2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. nutmeg
1/2 tsp. salt
3 1/2 cup apples, diced and peeled
1 cup chopped walnuts
2 tsp. vanilla
Preparation:
Combine oil and sugars; add eggs.
Combine dry ingredients and stir well.
Fold in apples, nuts, and vanilla. Batter will be very stiff.
Pour into 10-inch tube pan and bake at 325
for 90 minutes
or until toothpick inserted
into cake comes out dry.
Turn out of pan and let cool.
Top with your favorite caramel icing or keep it plain.
This also makes a great layer cake or sheet cake.
