Ingredients:
2 medium acorn squash (1-1/4 to 1-1/2 pounds each) (see Tip)
1 can (8 ounces) crushed pineapple, drained
3/4 cup peeled, seeded and chopped orange
3 tablespoons butter, melted
3 tablespoons light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Preparation:
1. Preheat the oven to 350�F.
2. Pierce the squash with a fork, and arrange on paper towels in the microwave.
Microwave on high power for 6 to 7 minutes, or until tender.
Cut in half, and remove the seeds.
3. In a medium bowl, combine the pineapple, orange, butter, brown sugar,
cinnamon, and salt; mix well.
Spoon evenly into the squash halves, place on baking sheets,
and bake uncovered for 45 to 60 minutes,
or until the squash is tender.

PREPARATION TIP: To keep squash halves upright as they bake, before stuffing,
cut a narrow slice off the bottom of each half.
