1 packed cup of Lichen or Iceland Moss(measured after soaked in lukewarm water) 1 1/2 cup rye flour 1/2 cup whole wheatflour a pinch of salt boiling water as needed
1.The moss is soaked for a few minutes and the drained and chopped.
2.Mix it with the two flours and salt
3.Then gradually add boiling water and stir well untill you have a stiff but pliable dough.
4.Divide it into 12 equal portions, roll them out thinly and cut out a round cake,7-8 inches in diameter.
5.Prick them with a fork.
As for baking,normally they are baked on hot stones but you can also use a griddle,They are baked at high heat untill black spots begin to appear.Then they are turned and baked on the other side. They should be stacked and covered at once with a damp cloth.
Serve with butter and cheese or cold meat
