Ginger Cake

Ingredients:
175g soft Butter
1 cup Treacle
2 cups Brown Sugar
3 cups Plain (All purpose) Flour
5 tablespoons ground Ginger
1 teaspoon BiCarb Soda
1 1/2 teaspoons Baking Powder
2 Eggs, lightly beaten
1 1/4 cups Milk
1 teaspoon Vanilla essence

Method:
1. Preheat oven to 220 C / 445 F.
2. Grease and line one large cake tin (or two small ones).
3. Melt butter, treacle and sugar over low heat. Cool.
4. Sift dry ingredients into large bowl.
5. Add Treacle mix to dry mix.
6. Add eggs, milk and vanilla, mixing gently.
7. Bake 35 - 45 minutes.

Lemon icing goes really well with this: 3 cups icing mix, 75g soft butter, lemon juice to taste and hot water to make consistency.
