Tortilla Soup

Cooking Time - 30 minutes
Approximate Preparation Time - 20 Minutes

Ingredients:

1 Tablespoon Salad Oil
1 Large Onion, Diced
3 Cans (14.5 oz.)fat-free chicken broth
2 Cans (8 oz.) Tomato Sauce
1 can (16 oz.) Whole Tomatoes Including Liquid and Diced
1 Lb. Chopped Roasted Green Chile (Frozen is Fine)
1/2 Teaspoon Garlic Powder
1/4 Teaspoon Pepper
1 Package (10 oz.) Tortilla Chips
1/2 Teaspoon Garlic Powder
3 Cups Grated Cheddar Cheese

Directions:

In a large saucepan, heat oil. Saute onion until transparent. Add broth, tomato sauce, tomatoes, green chile, garlic powder, and pepper. Cover and bring to a boil. Lower heat and simmer for 20 minutes. To serve, place a few tortilla chips in bowl and fill the bowl 3/4 full with soup. Top with cheese and a few more chips. Serve with the remaining chips. Makes 8 servings.
