Tortilla Soup

Ingredients: |

1 Tablespoon Salad Oil
|
|
|
|
1 Large Onion, Diced
|
|
3 Cans (14.5 oz.)fat-free chicken broth
|
|
2 Cans (8 oz.) Tomato Sauce
|
|
1 can (16 oz.) Whole Tomatoes Including Liquid and Diced
|
|
1 Lb. Chopped Roasted Green Chile (Frozen is Fine)
|
|
1/2 Teaspoon Garlic Powder
|
|
1/4 Teaspoon Pepper
|
|
1 Package (10 oz.) Tortilla Chips
|
|
1/2 Teaspoon Garlic Powder
|
|
3 Cups Grated Cheddar Cheese
|
|

Directions: |

In a large saucepan, heat oil. Saute onion until transparent. Add broth, tomato sauce, tomatoes, green chile, garlic powder, and pepper. Cover and bring to a boil. Lower heat and simmer for 20 minutes. To serve, place a few tortilla chips in bowl and fill the bowl 3/4 full with soup. Top with cheese and a few more chips. Serve with the remaining chips. Makes 8 servings. |
