Mixed Vegetables Casserole

Cooking Time - 45 Minutes
Approximate Preparation Time - 20 Minutes

Ingredients:

16 Ounces of your favorite mixed vegetables, canned or frozen
1 Cup Breadcrumbs
1/2 cup Mayonnaise
1 Tbsp Butter or Margarine, Softened
6 to 8 Ounces of your favorite shredded cheese
1/2 teaspoon salt (Or to taste)
1 teaspoons black pepper, (Or to taste)

Directions:

If using frozen vegetables, pre-thaw them. In a large bowl, combine all ingredients except about 1/3 of the bread crumbs. Place in an oven-safe casserole dish. Sprinkle remaining bread crumbs on top and cover. Bake at 325 for 30 minutes. Remove lid and bake an additional 15 minutes. The original recipe calls for two cans of Veg-All, but I like to use the Broccoli, Carrots, and Waterchestnuts mixture, combined with one can of Veg-All. The kids will eat their vegetables this way!
