Ingredients: |

2 Lbs. Smoked Sausage (Roger Woods' is Best!) Cut into 2" pieces
|

5 Lbs. Redskin (New) Potatoes, washed, halved and/or quartered
|
|
|
|
Two Large Onions, diced
|
|
6 to 8 ears corn on the cob, halve the ears
|
|
1 Large Clove Fresh Garlic, minced
|
|
3 to 4 Lbs. Medium Shrimp, cleaned, peeling optional
|
|
3 to 4 Large Bay Leaves
|
|
Ole Bay Seasoning to taste
|
|
Salt & Pepper to taste
|
|
Cajun Seasoning and Tabasco to taste

This is a recipe that is very popular in and around the Southeast US. This particular version comes from Ms. Marie Tootle of Savannah, GA. In your very biggest pot, put all the ingredients together except shrimp and corn, and bring to a rolling boil. Always check the taste, you may want to make it a little more spicy. Add the corn. As soon as the potatoes become tender, add the shrimp and bring back to a rolling boil. Drain. Best served dumped onto newspapers in the middle of the table. Everone can serve themselves at the low country boil. Enjoy!
