Cooking Directions:

Pre-heat oven to 350 degrees

Mix the beef , cheddar cheese , 16 oz. sauce , sour cream and scallions in a bowl.

Spoon liberally into tortillas , place in pan (s).

Cover with jack cheese and 8 oz. sauce.

Bake till cheese is bubbling.

Feed's an army ! Serve with a guacamole salad , queso and chips Serve your favorite beverage.....

Cajun Roast Beef Enchiladas

Cooking Time - 30 Minutes
Approximate Preparation Time - 30 Minutes

Ingredients:

1 lb. thin sliced cajun roast beef from your local deli (regular works too , you just need cajun spice) , chop it up into small pieces.
1 16 oz. can of mild enchilada sauce and 1 8 oz. can of same
1 lb. jack cheese , 1 lb. cheddar
8 oz. sour cream
3 bunches spring onions (scallions) chopped down just into the green part
1 20 count pack of flour tortillas
