My Dad's Blackened Fish

Cooking Time - Less Than 10 Minutes
Approximate Preparation Time - 10 Minutes

Ingredients:

Fillets (1" thick) of a course-grained fish, ie.... grouper, sea bass, drum, mahi-mahi, snapper, etc. (As many as you have guests!) Remove any skin on fillets so fish will not curl when cooked.
Cajun Blackened Fish Seasoning...(Paul Prudhomme's or Zatarain's is Best!)

Directions:

(On an outdoors grill...because of the smoke produced)...INTENSELY...Pre-Heat cast-iron skillet or griddle.....no oils....cook fish approximately 3-minutes on each side, but checking for doneness. Fish will flake when done. Serve with grits, hush-puppies, and cole slaw ....Delicious!!!!!
