Chicken Dijon

Cooking Time - 30 minutes
Approximate Preparation Time - 20 Minutes

Ingredients:

3 Lbs. Boneless, Skinless, Chicken Breasts
1/2 Cup Flour, Seasoned with Salt & Pepper
2 Tablespoons Olive Oil
1 Teaspoon Minced Garlic
1/3 Cup Dijon Mustard
2-3 Large Sprigs Fresh Rosemary
1 Cup Shredded Mozzarella, Provolone, Or Swiss Cheese

Directions:

Dredge chicken in seasoned flour. In large skillet, heat olive oil and lightly brown the garlic. Brown chicken on both sides, remove, drain, and place in baking dish. Spread mustard over each piece, and sprinkle with rosemary leaves. Place any remaining rosemary twigs in dish with chicken. Cover with foil and bake at 325 for 20 minutes. Remove foil and bake an additional 10 minutes or until brown. Sprinkle cheese over chicken and bake until melting, or about another 10 minutes. Makes 6 servings.
