Lima Bean Casserole

 

Ingredients:

The night before, or in the morning, place beans in a pot and cover with water. Bring to a boil, remove from heat, then cover and let sit until ready to use.

Add salt, carrots, and bacon to beans. Cook until carrots are tender. Brown meat. Add onions and cook until onions are done. Add garlic powder, tomatoes, and brown sugar. Simmer for 15 minutes.

Remove bacon from beans. Add meat mixture to beans and stir. Pour into 9 x 13 inch pan. Chop bacon into small pieces about 1/2 inch wide and sprinkle over casserole. Cover with foil and cook 1 hour in 400 degree oven. After cooking for 1 hour, take off foil and cook for 30 minutes longer. Serve alone or over white rice.

Serves 7-9 people.
