FEBRUARY 12, 1861

Desiree and Walter walked out of his hotel office and found Marta in the kitchen. "Marta I would like for you to meet our new daytime cook."

Stunned at first Marta didn't know what to say, but after a few minutes she found her voice. "Ummm . . . uhhh," but she lost it again.

"I know you think it's rather unusual for me to be a cook, but what can I say. I could use the money." Seeing the skepticism on Marta's face, she continued. "The cowboys would much rather sit around buying the other girl's drinks instead of hearing me sing, so I don't get much tips. Well except when Walter comes in." She smiled at her new employer.

"She will be cooking in the daytime, and Ted will take over in the evenings, so now you won't have to do much cooking unless it's their day off." Walter watched as the skepticism was replaced by relief. He knew that she had been swamped with cooking and waitressing. And some days he knew that she just wanted to scream and let all her frustrations out, but for some reason she never did.

"I'm glad you're going to be cooking. I'm really tired of doing it and the waitressing. But if you need any help just let me know." Marta was always eager to help people, and she didn't want Desiree to think that she couldn't ask her for her assistance. "I'll just take this out," she picked up two plates of food, "and see if we have any other orders."

Marta delivered the entrees to her customers, and then took the next couple's order. She went back into the kitchen and told Desiree the order, so that she could get started on it. Then Marta returned to the dining room and took the rest of the people's orders. She then returned to the kitchen to give Desiree some assistance.

The week went by and Marta and Desiree got along very well. Marta found Desiree to be a very good cook, and they became good friends.
