Basic Tomato Sauce

10-12 Medium Tomatoes

Place tomatoes in large pot. Cover with water. Place over medium high heat. As water heats, tomatoes will start to "pop." As each tomato's skin bursts,or pops, remove from water with slotted spoon. Under cold running water, peel and core tomatoes. BE CAREFUL-TOMATOES WILL BE VERY HOT. Once all tomatoes have been removed from pot, discard water. After all tomatoes are peeled and cored , return tomatoes to pot. (Discard skins and cores).

Add to tomatoes in pot:

1 6-7 inch stalk Oregano leaves-remove leaves, discard stalk.
2 3-4 inch stalks Thyme leaves-remove leaves, and discard stalk.
2-3 Basil leaves.
2 Bay leaves.
1/2 cup Grated Parmesan Cheese.Sliced Cheese
1/2 Medium Onion, chopped.
Pinch Sugar.
Salt, Pepper, and Garlic to taste.

Bring to boil over High heat. Reduce heat to simmer, cover, and cook for up to two hours, stirring occassionally. BE SURE TO REMOVE BAY LEAF BEFORE SERVING OR USING IN OTHER RECIPES.

This is enough for two meals for a family of 4. See Below for uses for Basic Tomato Sauce.

Meatballs

Mix together:
1 lb Ground Beef.
Leaves from 1 4-5 inch stalk of Oregano and 1 3-4 inch stalk of Thyme.
1 Basil leaf, chopped.
1/4 Medium Onion, chopped.
1/4 Cup Grated Parmesan Cheese.
Garlic, Salt, and Pepper to taste.
1-2 Eggs-enough so that mixture is wet enough to form into Meatballs.

Form into 2 inch balls. Roll in flour. Brown in 1 stick butter/margarine, melted in frying pan over medium heat. Add to simmering Basic Tomato sauce with 12 oz Tomato Paste. Simmer sauce for 2 hours, to make sure meatballs cook thoroughly. This makes a wonderful Spaghetti Sauce.

Or...Plate of Spaghetti

Bake Meatballs in covered casserole with enough Basic Tomato Sauce to cover them. Bake at 350 degrees farenheit for 30 minutes. This makes a delicious accompaniment to Spaghetti with Tomato Sauce. The sauce you will have with the meatballs will not be thick enough to be substituted for Spaghetti Sauce.




Other Uses For Basic Tomato Sauce


Pot Roast: Place Boneless Chuck Roast, 1/2 recipe Basic Tomato Sauce, 1 Sage leaf, and one whole potato-pierced 4 times with fork tines-per person in Roasting Pan. Cover with foil and bake at 350 degrees Farenheit for 3 hours (or until meat is done-use a meat thermometer). OR Place everything in Crockpot, and cook on low for 8-10 hours.

Carrot Stew: Cut up Boneless Chuck Roast into cubes. Coat with flour, salt, and pepper. Brown in 1 stick melted butter/margarine. Add cubed potatoes, carrots, celery, and other vegetables. Add 1/2 recipe Basic Tomato Sauce and 1 -6 oz can tomato paste. Add water if it seems too thick. Bring to boil. Reduce heat. Simmer 2 hours. Meat should be easy to cut with a fork, as should the potatoes.

Shrimp Creole: Add 1 stalk celery, chopped, 1/2 green pepper chopped, 1/2 medium onion, chopped,and 1 sage leaf, chopped, and one teaspoon Worcestshire Sauce to 1/2 recipe Basic Tomato Sauce. Heat, then add one can cooked shrimp. Heat just enough to heat shrimp. Serve over rice, with peas, and cornbread!
