Lemon Sponge Pie
1 pie crust pastry
1/4 C. melted butter
1 C. sugar
3 T. flour
3 eggs, separated
3 T. lemon juice
2 tsp. grated lemon peel
1 1/2 C. milk
Blend the 1/4 C. melted butter, sugar and flour. Add the 3 beaten egg yolks, lemon juice and peel, and milk. Beat the egg whites till stiff and fold into the above ingredients. Put pastry in pie pan and pour in pie ingredients. Bake at 425' for 8 minutes. Reduce heat to 325' and bake for 25 minutes more.
