Texas Hash

Ingredients

1. 1 large onion

2. 1 large green pepper

3. 1 lb. ground beef

4. 1 can Rotel tomatoes+6oz. water

5. 1/2 cup uncooked rice

6. 1 tsp. chili powder

7. Salt and pepper to taste

Saute onion and pepper,add meat and brown. Add other ingredients.Pour in 2 qt. casserole dish (greased). Cover and bake 1 hour at 350�. Remove cover last 15 minutes.

SOUTHERN STYLE JAMBALAYA

Ingredients

1. 1/2 lb. boned chicken breasts

2. 2 tbls. butter

3. 12 oz. polish sausage

4. 1 small green pepper (diced)

5. 1 small onion (diced)

6. 1 stalk celery (diced)

7. 1 (14 1/2 oz) can Rotel tomatoes

8. 1/2 c. water

9. 1 1/2 c. minute rice

10. 1/2 tsp. salt

11. 1/2 tsp. Louisana hot sauce

Chop, cook, and stir chicken in hot butter in large skillet until lightly browned. Add sliced sausage, green peppers, onion and celery; cook until veggies are just tender, about 5 minutes. Mix in Rotel tomatoes and water; bring to a full boil. Stir in rice, salt and hot sauce. Cover and remove from heat. Let stand 5 minutes. Fluff with fork.
