PEANUT BUTTER PIE

Here is a Peanut Butter Pie recipe I found that was selected grand champion at the Albany, Oregon county fair.

Crust:
1 1/4 c. chocolate cookie crumbs(20 cookies)
1/4 c. sugar
1/4 c. butter, melted

Filling:
1 pkg.(8oz)cream cheese,softenend
1 c. creamy peanut butter
1 c. sugar
1 tbls. butter,softened
1 tsp. vanilla extract
1 c. heavy cream, whipped
Grated chocolate or chocoloate cookie crumbs, optional

Combine crust ingredients; press into a 9" pie plate. Bake at 375� for 10 minutes. Cool. In a mixing bowl, beat cream cheese, peanut butter, sugar, butter and vanilla until smooth. Fold in whipped cream. Gently spoon into crust. Garnish with chocolate or cookie crumbs if desired. Refrigerate.
Yeild: 8-10 servings
