Ingredients:
3 TBSP vegetable oil
1-1/2 lb. beef sirloin or pork butt,
cut
in 1 inch cubes
1-1/2 cup diced onion
1 TBSP minced garlic
6 cups chicken or beef broth
2-3 TSP salt
1 pound red or white potatoes,
cut in 1 inch cubes
1 cup roasted New Mexico mild
chiles, diced
3 TBSP diced red bell pepper
2 TBSP chopped cilantro, or to taste
Instructions:
Heat the oil over high heat and brown the meat in batches. Set aside. In the same oil, saute the onions until golden. Add the garlic and saute 1 minute. Return the meat and juices, add broth, potatoes, and salt and bring to a boil. Reduce the heat and simmer for 1 hour, until the meat and potatoes are tender. Add the chiles, and red bell pepper. Cook 15 to 20 minutes longer. Add cilantro, stir, and serve.
