Ingredients
2 cups thawed frozen artichoke hearts
1 cup coarsely chopped drained roasted
red peppers
1/4 cup chopped parsley
6 large pitted black olives, sliced
2 tablespoons plus 1 teaspoon olive oil
2 tablespoons red wine vinegar
1 1/2 teaspoons dried tarragon
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons grated parmesan cheese
red leaf lettuce, for garnish
Instructions
1-Drain the thawed artichoke hearts on paper towels to absorb excess moisture.
2-In a medium bowl, combine the artichoke hearts,roasted peppers, parsley, and olives.
3-To prepare the dressing, in a small bowl, combine the oil, vinegar, tarragon, salt, and black pepper. Pour the dressing over the artichokes and toss to mix well
4-Sprinkle the salad with the Parmesan cheese and toss again. Garnish with the red leaf lettuce.
