Ingredients
3/4-pound lean pork tenderloin,
cut into 4 slices
2 teaspoons olive or vegetable
oil
1/2 cup chopped onion
2 teaspoons chopped fresh or 1/2
teaspoon dried rosemary leaves,
crushed
1/4 teaspoon salt
1/8 teaspoon of pepper
1 garlic clove, finely chopped
2 cups cubed acorn or butternut
squash
1 cup chopped apple
2 tablespoons raisins
1/2 cup apple cider or apple juice
Instuctions
1 Pound pork tenderloin slices until 1/2 inch thick. Heat oil in 10-inch nonstick skillet over medium heat. Cook pork, turning once, about 12 minutes or until done. Remove pork from skillet; keep warm.
2 Cook onion, rosemary, salt, pepper and garlic in skillet over medium heat about 3 minutes, stirring occasionally, until onion is tender. Stir in remaining ingredients. Top with pork. Reduce heat to low. Cover and cook about 10 minutes or until squash is tender.
