Ingredients
3/4 cup plain nonfat yogurt
3 tablespoons minced fresh ginger
3 garlic cloves, minced
1 tablespoon curry powder
2 teaspoons ground coriander
2 teaspoons vegetable oil
1/2 teaspoon plus 1/8 teaspoon
ground red pepper
1/4 teaspoon salt
1/4 teaspoon granulated sugar
4 6-ounce bone-in chicken breast
halves, skinned
1/2 cup golden raisins
2 tablespoons fesh lemon juice
Instructions
1 In a medium bowl, combine the yogurt, ginger, garlic. curry powder, coriander, oil, 1/2 teaspoon of the red pepper, the salt, and sugar. Stir to combine.
2 Add the chicken to the yogurt marinade and turn to coat well. Cover and set aside to marinate in the refrigerator for 30 minutes, turning the chicken once. Preheat the broiler.
3 Reserving the marinade, remove the chicken and place it on a broiler pan bony-side up. Broil the chicken 4 inches from the heat for 5 to 8 minutes. Turn the chicken over, brush with the reserved marinade, and broil until the chicken is cooked through, about 8 minutes.
4 Meanwhile, in a food processor or blender, combine the raisins, lemon luice, and the remaining 1/8 teaspoon red pepper, and process until roughly chopped.
5 Serve the chicken hot with the raisin relish on the side.
