Hawaiian Shrimp

Prep Time: approx. 30 Minutes.
Cook Time: approx. 10 Minutes.
makes 16 servings.

Ingredients:

2 pounds medium shrimp-peeled
and deveined
2(20 ounce) cans pineapple
chunks, juice reserved
1/2 pound diced bacon
2 large red bell peppers,
chopped
1 cup sweet and sour sauce
2 cups cherry tomatoes
1/2 pound fresh mushrooms,
stems removed

Instructions:

1. Preheat grill for high heat.
2. Place shrimp, pineapple, bacon, red bell peppers, mushroom caps, and cherry tomatoes on skewers, alternating ingredients. Place in a shallow baking dish.
3. Mix sweet and sour sauce with reserved pineapple juice. Pour over kabobs.
4. Oil grate, and grill kabobs for 3 to 4 minutes on each side over high heat. Baste often with sauce. Serve hot
