Persian Style Lamb with Almonds

Time: 25 minutes
Makes: 4 servings

Ingredients

1 tablespoon salad oil
1/2 cup slivered almonds
1 pound ground lamb
1 1/2 cups chopped onions
1 beef-flavor bouillon cube
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic salt
1 tablespoon lime or lemon juice
1 teaspoon dried mint
spinach leaves
1 medium tomato, cut into wedges

Instructions

1n 10-inch skillet over medium heat, in hot salad oil, cook slivered almonds, stirring, until golden brown. Remove almonds to plate.
2 Over medium-high heat, in oil remaining in skillet, cook ground lamb and next 5 ingredients, stirring, until meat is browned, about10 minutes.
3 To lamb, add almonds, lime juice and mint. Stir mixture to blend well.
4 Line platter with spinach leaves and garnish with tomato wedges.
