Blackened Red Snapper

Time: 17 minutes
Makes: 2 servings

Ingredients

1 Tablespoon plain dry bread crumbs
1 teaspoon dried basil
1 teaspoon paprika
1/2 teaspoon fennel seeds
1/2 reaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1/4 teaspoon red pepper flakes
2 red snapper fillets(about 1 inch
thick, 5 ounces each), skinned
1/2 teaspoon corn oil
1/2 lime

Instructions

1. Grind crumbs with remaining ingredients except fillets, oil, and loime in food processor or blender until fine; coat fillets with crumbs.
2. Heat cast-iron skillet large enough to hold fish in one layer over high heat until very hot. Brush with oil.
3. Place fish in skillet; cook, turning once, until crisp, golden, and slightly blackened in spots, 3 to 4 minutes each side. Squeeze lime over fillets.
