Ingredients
1 pound fresh or frozen raw
medium shrimp(in shells)
2 cups boiling water
2 cups sliced mushrooms(about
5 ounces)
1 cup uncooked regular long
grain rice
1 small onion, thinly sliced
1 teaspoon salt
3/4 teaspoon ground ginger
1 cup whole almonds, toasted
1 can(15 ounces) mandarin orange
segments, drained
1 package(6 ounces) frozen pea
pods, thawed and drained
Instructions
1. Peel shrimp. (If shrimps are frozen, do not thaw; peel in cold water.) Make a shallow cut lengthwise down back of each shrimp; wash out vein. Heat oven to 350 degrees. Mix water, mushrooms, rice, onion, shrimp, salt and ginger in ungreased rectangular baking dish, 13X9X2 inches. Cover tightly with aluminum foil.
2. Bake about 40 minutes or until liquid is absorbed and shrimps are pink. Stir in remaining ingredients. Cover and let stand until pea pods are hot.
