Southwestern Chili

Time: 2 1/2 hours
Makes: 6 to 8 servings

Ingredients

1-3 pound beef chuck roast, boned
2 tablespoons vegetable oil
1 large onion, chopped
2 garlic cloves, minced
1 1/2 pounds fresh tomatoes,
coarsely chopped
1/4 cup worcestershire sauce
1 tablespoon chili powder
1 teaspoon dried oregano,
crumbled
5 sprigs of cilantro, chopped
1 can 4oz. diced green chili
1/4 teaspoon cumin
salt and pepper to taste
serrano hot peppers to taste
(optional)

Instructions

1 Cut beef into 1/2 inch cubes; set aside. Heat oil in Dutch oven or large saucepan over high heat. Add onion, cilantro and, garlic; cook and stir until onion is tender.
2 Stir in cubed beef and cook until brown. Add tomatoes, wrecestershire, Chili powder, oregano, cumin, salt and pepper to pan; stir to combine.
3 Cover and simmer 1 hour and 15 minutes. Uncover; simmer 45 minutes longer, or until meat is tender. Stir in serrano hot peppers and chilis and cook until heated through.
4. Serve with cornbread(optional)
