Salmon Fillets With Wild Mushroom Sauce

Cook Time: 45 minutes
Makes: 6 servings

Ingredients:

3 tablespoons butter
1 small onion, minced
1 pound mixed wild mushrooms
(such as oyster, crimini,
shiitake),sliced
3/4 cup bottled clam juice
3/4 cup dry white wine
1/4 cup whipping cream
2 teaspoons chopped fresh thyme
6-6-ounce salmon fillets
2 tablespoons pure light olive oil
2 tablespoons fresh lemon juice

Instructions:

1.Melt butter in heavy large skillet over medium-high heat. Add onion and saute until tender, about 5 minutes. Add mushrooms and saute until beginning to brown, about 10 minutes. Add clam juice and wine and boil until almost all liquid evaporates, about 20 minutes. Add cream; boil until thickened, about 1 minute. remove from heat. Stir in thyme. Season to taste with salt and pepper.
2. Preheat broiler. Brush fish with oil and lemon juice. Season with salt and pepper. Broil until just cooked through, about 4 minutes per side. Transfer to plates.
3. Spoon sauce over salmon and serve.

Goes great with rice, noodles or steamed asparagus.
