Ingredients
2 tablespoons reduced-calorie margarine
2 medium potatoes, cooked and chopped
(about 2 cups)
1-1/2 cups cut-up cooked corned beef or
Lean cooked beef (about 8 ounces)
� cup chopped bell pepper (about 1 small)
� cup sliced green onions with tops (about
2 medium)
2 tablespoons chopped fresh parsley
1 teaspoon chopped fresh or � teaspoon
dried thyme leaves
2 hard-boiled eggs, chopped
Instructions
1.Heat margarine in 10-inch nonstick skillet over medium heat.
Stir in remaining ingredients. Cook uncovered 8 to 10
minutes, turning frequently, until hot.
