Ingredients
1-1/2 cups
torn Bibb lettuce leaves
1 medium pink grapefruit (about 1 pound),
peeled and sectioned (reserve juice)
2 tablespoons sliced scallions (green onions)
1 teaspoon each finely chopped cilantro
(Chinese parsley) or Italian (flat-leaf) parsley,
peanut oil, white wine vinegar, and Dijon-style
mustard
Dash crushed red pepper
Instructions
1. Line
serving platters with lettuce; decoratively arrange
grapefruit over lettuce and sprinkle with scallions. 2.
Using a wire whisk, in small mixing bowl beat together
reserved grapefruit juice, cilantro, oil, vinegar,
mustard, and pepper. Pour over salad.
