DEEP DISH PEACH PIE

Time: 1 hour
Makes: 6 to 8 servings

Ingredients

2 1/2 cups peaches, skinned and sliced
into 1/2 inch wedges
3 tablespoons sugar
1 teaspoon cinnamon
1/3 cup finely ground almonds
for batter
1 cup sugar
1 cup all-purpose flour
1/2 cup butter, melted
1 egg
1 teaspoon almond extract

Instructions

1 Preheat the oven to 350 degrees. Arrange the peach slices in a 9" deep-dish pan. Combine the 3 tablespoons of sugar, cinnamon, and ground almonds in a mixing bowl. Sprinkle this mixture over the peaches.
2 Beat together the 1 cup sugar, flour, butter, egg, and almond extract until fluffy. Spread this batter over the peaches, covering fruit completely.
3 Bake for 45 minutes. Serve hot, warm, or room temperature.
