Ingredients:
6 Bosc pears
2 cups water
1 cup sugar
2 cinnamon sticks
5 whole cloves
zest of 1 lemon,
cut in strips
juice of � lemon
Instructions:
1. Peel pears, leaving stem intact. Using a small melon baller, remove stems and seeds from bottom of pears.
2. In a saucepan that will accommodate pears upright, combine water, sugar, cinnamon sticks, cloves, lemon zest and lemon juice.
3. Bring to boil. Add pears, cook over medium heat, maintaining a boil for 5 minutes.
Remove from heat, allow pears to cool slowly.
4. Baste pears occasionally with poaching liquid. When completely cooled , chill pears.
5. Serve on individual dessert plates; spoon liquid over pears.

For a pretty and fool-proof presentation, pick pears that are not overly ripe and have gracefully shaped stems.
